Lemon Hart Demerara Rum 151 proof Guyana
This is a brazen, dark 151 from Guyana. It was out of the market for a while and we are glad to have it back. An essential element for many Tiki drinks, this has the kick and flavor you want in an over proof rum.

The Scarlet Ibis Trinidad
This rum was originally commissioned by New York's "Death & Co." one of the first of the cutting edge cocktail bars. It is a blend or 3 to 5 year old rums and sports a high octane 98 proof. It was conceived as a base for cocktails so the strength is not a problem in mixed drinks. Because of its unique, coffee, allspice and burnt sugar flavors, however, you might be tempted to sip this straight. An ice cube should take down some of the heat.

Gosling's Black Seal Rum
This is a soft, spicy, dark rum that is most famous as an ingredient of the "Dark and Stormy" cocktail. It's also easy to sit on the rocks with a squeeze of lime. Very smooth and fruity. This does not have the strong, molasses flavors that you find in many dark rums.

Neisson Rhum Agricole "Sous Bois" Martinique
Rhum Agricole from Martinique is made from sugar cane juice and not molasses according to the French AOC rules. The Sous Bois is aged in French oak and American whiskey barrels resulting in a complex, spicy flavor that hints at its time in the whiskey barrels. The finish is smooth and elegant.

Smith & Cross Traditional Jamaica Rum "Navy Strength"
Supposedly the term Navy Strength came about because at 114 proof, if the rum was somehow spilled on your musket or cannon, it would not prevent the gunpowder from igniting. Hmm... I guess the British Navy's rules were a bit less stringent back in the day. In any case, the rum is fruity and flavorful, but without the ultra-heavy molasses flavor. A nice addition to any rum lover's bar.

Matusalem
Here is a classic,smooth, flavorful rum made in the Cuban style. Although it is currently made in the Dominican Republic, the owners still plan to move back to Cuba when the political climate will allow it. Matusalem is great in cocktails but can be sipped by itself. Cigar smokers will love this one.

Rhum Barbancourt Reserve Speciale Haiti
This from hails from the Republic of Haiti and is in the style of Rhum Agricole from Martinique. Rather than starting with molasses,they produce something like a wine made from fermented sugar cane juice. This is then distilled like cognac. The result here is a flavorful and nuanced rum. This can be used in mixed drinks but it is also complex enough to drink straight.

Batavia Arrack
Batavia Arrack is a spirit that was quite common prior to prohibition. In fact, in the early days of the cocktail, it was a staple in many of the most popular drinks. Today, it has all but disappeared in the US. Arrack is a distillation of fermented sugar cane and red rice.
