Seleccion de La Cosecha

Some of the most interesting sherries I've seen in a while are from Seleccion de La Cosecha. They specialize in unblended sherries, which means they are produced by very small producers, and are not mixed with the wines of other growers.

Amaontillado Superior

This is an extremely complex, dry sherry, aged 15 years in oak casks. Deeply concentrated with some cigar box, toasted walnuts and orange peel.

Gran Barquero Fino 500ml

This is a full flavored, dry, Sherry-like wine from a small producer in Montilla-Moriles. Although this is technically not Sherry, it is very similar.The wine is made from the Pedro Ximénez grape, naturally fermented under the veil of "flor,"( a strain of yeast that grows naturally and covers the wine) and aged by the Solera system, just like Sherry. It is nutty and a little salty. Delicious with tapas or cheese.
Serve Chilled.

Oloroso Secco

This is also dry with an aroma of very ripe melon. The flavors are rich and nutty, again some melon and also notes of chocolate. The finish is clean with lots of acid.
