Fourny & Fils Grande Reserve 1er Cru Brut Vertus NV Champagne
This is your "no brainer, take to the party, nice bottle" of real Champagne. Fourny is a small producer that buys grapes from another branch of the family. This technically makes them negociants, but in spirit they are growers. The Grande Reserve, a blend or Pinot Noir and Chardonnay, is dry, but not austere, and is sure to make you the hit of the party. - George

Agrapart "7 Crus" Blanc de Blancs Brut Avize NV Champagne
Brothers Pascal & Fabrice Agrapart, are the fourth generation to farm and produce Champagne on their family's property. Grapes are grown with virtually no chemical intervention and harvested by hand. One parcel of the vineyard is actually plowed with a horse to avoid compacting the soil, therefore keeping it more alive. Every phase of production is done with attention to detail, respect for the land and the wines. The grapes for this bottling are selected from the family's holdings in the seven surrounding villages. The aromas are complex, more fruity than toasty. On the palate the wine shows a bit of pear or apple, and is fleshy enough to stand up to food. - -George

Paul Bara Rose Brut Grand Cru Bouzy NV Champagne
A wonderful, forward, slightly flamboyant rose. The deep color makes some people think that it might be sweet, which it is not. There is a lot to like about this bottle. Our friend Anthony says it smells like frozen strawberries, which I think says enough to leave it at that. - George

Geoffroy "Volupte" 1er Cru Brut Marne 2006 Champagne
If you are looking for something exotic, yet refined; opulent, yet restrained; look no further. The Volupte is a very special wine made from an 80/20 blend of Chardonnay and Pinot Noir, aged in wooden vats. It is quite dry but delivers a complex, slightly decadent experience. J. Lassalle Rose Brut 1er Chigny-Les-Roses NV Champagne
This delightful Champagne has a pale salmon color and has a subtle nose of red berry fruits. The texture is delicate with a fine, filigreed mousse. Lassalle tends to hold back the wines a bit longer than some houses (5 years in this case) so there is an integration and finesse that is really special. -George

Paul Bara Comtesse Marie de France Grand Cru Bouzy 2000 Champagne
This is what they call "Blanc de Noirs." That is, 100%Pinot Noir, but not left in contact with the skins, so the juice is white. Blanc de Noirs tend to be more assertive and spicy. This mischievous Comtesse jumps out of the glass and messes up your hair. Enticing, exotic flavors with lots of finesse and elegance. - George

Jacques Selosse "Initial" Blancs de Blanc Brut NV Champagne
Anselme Selosse is truly one of the pioneers of real, terroir driven Champagne. In 1980, when he took over his father's domain, he instituted organic practices and profoundly reduced yields. In the cellar he uses only indigenous yeasts and barrel ferments his base wine. The"
Initial" is a blanc de blanc (100% Chardonnay) made from an assemblage of three vintages and aged 2 years in bottle. This will be a rambunctious, full flavored wine that may frighten traditionalists. If you want to try something rare and unique, this is for you. -George

Billecart-Salmon "Brut Reserve" NV Champagne
It would be hard to argue the continued quality from this impeccable producer. Now in their seventh generation, the family has property in several villages within Champagne as well as long term relationships with outside growers. Their house style generally leans toward elegance and pristine focus. This wine has the minerality, tiny bubbles, and fresh citrus notes that make it the wine to drink in your tux, and/or sparkly dress. - George

The rich and toasty character of this Blanc de Noirs is balanced and superb. Aged for two-year minimum, the palate is developed and shows rich complex flavors. The amazing berries aromas and the creamy texture play a leading role and create a great finesse. Winemaker's Note: A fine salmon color, aggressive mousse and a lovely fruity wine with plenty of immediate charm and toasty aromas. There is also an explosive juicy flavor of raspberry. - George
